The Story of This Tea
Jiang Hua Xiang, meaning “Ginger Flower Fragrance,” is one of the most graceful and expressive Phoenix Dan Cong cultivars we have sourced. Its distinctive aroma of fresh ginger blossoms carries a light, cooling sweetness unlike any other Dan Cong.
This spring 2025 harvest was grown in Daping Village, high in Phoenix Mountain at around 1000 meters. The mountain’s misty mornings, mineral-rich soil, and natural biodiversity give this tea remarkable clarity and fragrance. We worked with local tea makers to apply a traditional two-stage charcoal roast that enhances the cultivar’s natural sweetness while preserving its signature floral aroma. The result is a tea of great purity and balance, both lively and soothing in the cup.
Aroma and Flavour
Each cup opens with a gentle wave of ginger blossom fragrance, followed by smooth, honeyed sweetness and soft minerality typical of high-mountain Dan Cong. The liquor glows a clear golden amber, and its lingering aftertaste fills the throat with elegant floral sweetness.

Brewing Guidelines
Gong Fu Style
- Teaware: Chaozhou red clay pot (朱泥壶) or porcelain gaiwan
- Ratio: 7 to 8 g per 100 ml water
- Water: 95 to 100°C, ideally soft spring water
- Infusions: Quick rinse, then short steeps (3–5 seconds) for the first three brews, extending gradually thereafter
Western Style
- Teaware: Porcelain or glass teapot
- Ratio: 3 to 4 g per 250 ml water
- Water: About 95°C
- Steeping: 2 to 3 minutes for the first infusion; resteep up to three times, lengthening each by 30 to 45 seconds
