A Rare and Fragrant Cliff Tea from Lian Hua Peak

Our 2024 Shui Jin Gui (Water Turtle) is a standout among Wuyi Yancha (rock oolongs), grown on the rugged cliffs of Lian Hua Peak, one of the historic core areas of Zhengyan terroir in Wuyishan. This tea comes from mature Shui Jin Gui bushes, around 50 years old, rooted deep in mineral-rich soil delivering a soft, sweet liquor that captures the essence of authentic cliff tea.

Aroma & Flavour Profile

Shui Jin Gui is known for its unique fruity aroma and elegant structure, and this year’s harvest is no exception. The dry leaf releases a beautifully floral, peachy fragrance, while the brewed liquor is round, smooth, and naturally sweet, with subtle stone fruit notes reminiscent of ripe white peach or apricot, with a finish that lingers like dried fig or baked apple peel.

The tea’s character is more delicate than some of the other Si Da Ming Cong (the four famous Wuyi cultivars), leaning into aromatic elegance rather than overt roast or minerality. It is an ideal introduction for those newer to Yancha, but complex enough to intrigue experienced tea drinkers.


Brewing Guidelines

Western Style

  • Tea-to-water ratio: 2.5–3g per 250ml

  • Water temperature: 95–100°C

  • Steep time: Start with 1.5–2 minutes, increasing with each infusion

  • Recommended teaware: Porcelain or glazed ceramic teapot or infuser mug

Gong Fu Style

  • Gaiwan or Yixing teapot (100–120ml)

  • Tea-to-water ratio: 6–7g

  • Water temperature: 100°C

  • Rinse once, then flash steep for the first 3-4 infusions then add 10–15s, increasing gradually

  • Best suited to Zhuni (朱泥) or Duan Ni (段泥) teapots for their excellent heat retention and gentle influence on aroma expression.
