This year I eager will share with you a tea I like very much, Tongmu Chigan. Chigan is a grade of Zhengshan Xiaozhong(Lapsang Souchong ). Generally, we pick the small single buds that just emerge from the tea trees in spring and then use the black tea processing technology to make tea. We call it Jinjunmei.
If the fresh leaves grow into fully mature leaves, we usually call the black tea processed with such raw materials Zhengshan Xiaozhong( in english LapsangSouchong )
The raw materials of Chigan tea are between Jinjunmei and Zhengshan Xiaozhong. That is, the fresh leaves have grown from the raw materials of Jinjunmei (all tea buds) to the tender leaves, but the leaves have not yet fully opened. The black tea made with the raw materials at this stage is called Chigan,
The raw materials of this tea are also from Masu Mountain Field, surrounded by bamboo forests. The tea produced in this tea garden is not bitter. The taste of this grade of raw materials is the closest to Jin Jun Mei, but it is much richer than 80% of Jin Jun Mei on the market. The nectar fragrance is very obvious, and it also has woody flavor (but compared with Masu old bush Lapsangsouchong this woody flavor is not that strong ,but it is there ) with a very obvious bamboo leaf flavor. The texture of the tea soup is viscous. Among black teas, there are few teas that can drink delicate tea soup and have a viscous texture, but this Chi Gan has both of these two characteristics.
It is worth tasting. At the moment of brewing, you will feel as if the entire tea garden ecology is vividly displayed in the teacup.
You can drink this grade of tea once a week asa big gift to your tired body. But I believe this tea will recharge your body and mind. Let you have more energy to start a new week of work.
Regarding the brewing method, I usually put 4g at a time in a 100-110ml covered bowl. Good tea really doesn't require too much attention to the brewing method. This tea tastes good whether you use boiling water or cold water, boil it or brew it with Gongfu tea.
