Bai Ji Guan 白鸡冠 2023

White Cockscomb is one of the four famous rock tea trees （四大名枞）in Wuyi Mountain. It is also known as the "artwork in the rock tea world". Many customers who buy White Cockscomb are very concerned about its appearance. White cockscomb is very different from other rock teas due to its unique appearance. Most of the white cockscombs currently on the market are  lightly roasted, which is more popular to maintain the freshness and aliveness of the tea leaves.

 Now a day  fewer and fewer tea farmers in Wuyi Mountain own the White Cockscomb variety. Many farmers have cut it down and planted other popular varieties. It is even rarer in the core production areas of Zhengyan.
 

This white cockscomb is made by purchasing fresh leaves from other farmer and then  we processed it . The production area is  Fo Guo Yan 佛国岩 in Zhengyan. I used a fire temperature of 110-120 degrees and roasted this tea three times. The roasting temperature of tea leaves is relatively low, which is a light roasting.
But tea is very thorough in the two key production steps of fermentation and roasting. Therefore, the tea does not have any greenish taste, it is very clear, with obvious milky aroma, and the tea soup is very sweet and umami.
