Winter -white tea 2022
In 2022 October, when we entered Tongmuguan, many new shoots sprouted sparsely in my relatives' tea garden, so we picked them and processed them into white tea to share with wuyiorigin tea club numbers
The raw material of tea is the exotic variety of Tongmuguan, which is the original raw material for processing Lapsang Souchong and Jinjunmei. These tea trees were distributed from the government to the farmers during the land reform, so according to the historical time, they are at least 80 years old (the exact age is unknown)
The tea garden is in Guwan keng 古玩坑 of Tongmuguan (about 1000 meters above sea level)
Production process:Picking fresh leaves-outdoor withering (the temperature is about 20 degrees, drying for 45 minutes)-oxidation (like making oolong tea, we use hand-shaking)-drying (outdoor drying for 3 days)-drying(by mahcine). We picked it for 3 days and processed more than 20 kilograms of finished tea in total.
Then at the beginning of December 2022, the tea cakes were hand-pressed. Due to the manual pressing, the weight of the tea leaves was inconsistent. Some were 5g and some were 8g. The hand-pressed small tea cakes were relatively loose, but retained the original taste of the tea leaves.
This is my first attempt. On top of the pure drying process of white tea, I added an additional shaking step of Wuyi rock tea to let the tea leaves ferment slightly. The raw material of the tea is organic tea. The ecology of the tea garden is very good. It is pure wilderness. I personally feel that the tea is very sweet, soft, and very refreshing after drinking it,meantime super high in Aroma .
For the picking standard ,I want to say this is gongmei ,more tender leaves .
